From the moment you arrive at Sushi by Scratch in the heart of Miami’s Coconut Grove neighborhood, you know you’re in for an unforgettable dining experience. The speakeasy-style eatery by power duo Chefs Phillip Frankland Lee and Margarita Kallas-Lee, is tucked away inside the historic Stirrup House, where you are greeted with a ginger-infused Japanese whiskey cocktail. After about 15 minutes you transition into a hidden back room where there is a 10-seat, counter-only omakase den. The attention to detail by the team of three chefs and one bartender is supreme, creating a deeply personalized and interactive experience worth the splurge.
The Michelin-starred sushi concept is a meticulously orchestrated tasting that lasts about two hours, with 17 strictly nigiri dishes (no substitutions) all made from scratch, and the quality of fish is unmatched. Everything from the house fermented soy sauce and vinegars to beet-infused wasabi is handmade. Each and every dish from the Hamachi and Toro to Scallop and Wagyuisexceptional, with an expertly made classical nigiri dish infused with exciting and original flavors that are delicious and noticeably unique to Sushi By Scratch. Each piece is explained and executed to perfection. The chef’s use of bone marrow over the course of two dishes was particularly memorable.
“Although the flavor profiles of our nigiri may not sound traditional, our approach to nigiri is,” states Kallas-Lee. “Our niche has always been our flavor profiles. Someone might be surprised when a perfect slice of Hamachi is painted with a sweet corn pudding and topped with a fine sprinkle of bread crumbs. But that one bite delivers a flavor you won’t forget and is also a call back to Phillip’s childhood and is designed to trigger our guests' most beloved food memories as well.”
