Endless Summer in Hossegor France

Looking for a refreshing and restorative trip to a magnifique locale? Look no further thanAyurvedic expert and raw food chef Emilie McBride’s--personal chef to surfing champion Kelly Slater and the Quicksilver team--upcoming retreat in Hossegor, France. Entitled, “Endless Summer”, McBride welcomes guests to a private villa minutes from the beach in the European surf mecca from September 19 through September 26, 2015. The eight day getaway, focusing on energizing both body and mind, promises twice daily yoga, meditation, seaside relaxation and three catered meals per day prepared with organic and locally sourced ingredients.

Frequented by celebrities eager to look and feel their best, McBride’s retreats take place throughout the year in unique regions all over Europe. They vary by embracing local culture, cuisine and activities. In addition to the revitalizing raw foods menu and spiritual sessions, attendees of “Endless Summer” can also expect surfing and paddle board instruction along the French Atlantic coast--an area revered for its world class beach-breaks.

Emilie McBride’s Raw Nori Rolls…

Ingredients:

  • 4 nori sheets
  • 1 cucumber, thinly sliced lengthwise
  • 1 avocado, thinly sliced
  • 1 red or yellow bell pepper, thinly sliced sprouts
  • Curry Spread
  • 3.2 oz sunflower seeds, soaked for 8+ hours, rinsed/drained
  • 1 tbsp. date paste (about 3 dates)
  • 1 tbsp. apple cider vinegar
  • 1 tbsp. sunflower oil
  • 1 garlic clove, crushed
  • 2 tbsp. curry powder
  • Pinch of salt and a few drops of water, if needed

 

To prepare:

  • Blend all curry spread ingredients until smooth
  • With the shiny part facing down, spread a small amount of curry spread on the nori sheet.
  • Garnish with vegetables.
  • Roll tightly and seal by wetting the last band with a drop of water.
  • Cut in half, or into smaller pieces.
  • Serve with a ginger sesame dressing and wasabi.
  • Shelf life: 1 day in the fridge
