Emilie McBride’s Raw Nori Rolls…
Ingredients:
- 4 nori sheets
- 1 cucumber, thinly sliced lengthwise
- 1 avocado, thinly sliced
- 1 red or yellow bell pepper, thinly sliced sprouts
- Curry Spread
- 3.2 oz sunflower seeds, soaked for 8+ hours, rinsed/drained
- 1 tbsp. date paste (about 3 dates)
- 1 tbsp. apple cider vinegar
- 1 tbsp. sunflower oil
- 1 garlic clove, crushed
- 2 tbsp. curry powder
- Pinch of salt and a few drops of water, if needed
To prepare:
- Blend all curry spread ingredients until smooth
- With the shiny part facing down, spread a small amount of curry spread on the nori sheet.
- Garnish with vegetables.
- Roll tightly and seal by wetting the last band with a drop of water.
- Cut in half, or into smaller pieces.
- Serve with a ginger sesame dressing and wasabi.
- Shelf life: 1 day in the fridge
