Michelin-starred chef Alain Ducasse has added two ventures to his roster and this time they’re atop the new Delano Las Vegas hotel. Called Rivea and Skyfall Lounge, both spots are officially open and offer guests great views of The Strip, Riviera-inspired cuisine and inventive cocktails.
“I am thrilled to introduce Rivea and Skyfall Lounge to Las Vegas,” said Chef Ducasse. “Upon entering the restaurant and lounge, every detail transports guests to those endless summer nights in the South of France. The seductive menu highlights simple, fresh Italian and French cooking, while the design is sophisticated and laid-back, complementing the best view of the Las Vegas Strip.”
Chef Alain Ducasse and Executive Chef Bruno Riou borrow from Provence and Italy for Rivea’s menu. Focusing on Mediterranean flavors, the dishes include small plates that allow diners to sample a variety of foods, like the Provençal caponata with capers and pine nuts. Main courses feature lobster with purple artichokes, line-caught striped bass with a minestrone reduction, and Colorado lamb accented by an herb pesto. For dessert, the tiramisu accompanied by a house cold-brewed coffee sounds amazing. Or the Limoncello Baba, which is a new take on Chef Ducasse’s famous rum baba and is paired with a glass of its namesake. Of course, there’s also the classic chocolate-hazelnut Zuccotto, which is a semi-frozen treat made with ice cream, cake and brandy.
Though drinks can be had at Rivea, hopping on over to the adjacent Skyfall Lounge sounds like a better plan. With 180-degree views of the city, DJs spin house and dance music until 1 a.m. while a full cocktail menu will keep your taste buds busy. Thanks to Proprietors LLC, the group behind New York City’s Death & Co and Los Angeles’ Honeycut, the spirits program is organized into various categories: Golden Hour, Effervescent, Shaken, and Stirred. Skyfall (which has to be a James Bond reference) also offers bottle service that allows you to create your own cocktails table-side.
