Perched cliff-side, 650 feet above the Palm Springs desert floor, the Edge Steakhouse at The Ritz-Carlton, Rancho Mirage is definitely on our must-try list. Encased in glass, the restaurant makes for a pretty dramatic dining atmosphere and promises cuisine to match, like foraged mushrooms with house-milled rice and braised lamb shank.
"We have put together one of the best culinary teams in the Southern California desert,” says Executive Chef, Bruno Lopez. The Edge offers prime-cut steaks (including Japanese and Australian Wagyu beef), hand-cut and dry-aged bone-in meats, and seafood—all paired with an international wine list. Thanks to a dry-aging room, which tenderizes the beef and brings out the flavor, certain steaks are aged right in the building for 21-65 days.
Able to host 82 guests in the dining room, with an additional 12 at the bar, the establishment features a nice modern design that doesn't distract from the views of Rancho Mirage and the surrounding San Bernardino Mountains.
The opening menu features signature dishes like slow-braised and charred Mediterranean octopus with fingerling potatoes, an herb salad, and squid ink purée. The braised lamb shank is accompanied by a parsley root purée, and the wild foraged mushrooms are paired with wood sorrel and garlic blossoms. Of course, there are also several classic cocktails available, like the Moscow Mule or Sidecar, as well as the Edge Manhattan with oak cask-aged Buffalo Trace Bourbon and Carpano Antica. The steakhouse is reservation only, and open for dinner Wednesday through Sunday from 5 p.m. to 10 p.m.
