Dom Pérignon Debuts Two Vintages in Landmark Gastronomy Soirees

In a historic first, Dom Pérignon debuts two vintage champagnes  at a secret location in a series of exclusive, bookable gastronomy events that marry fine bubbly from the esteemed French champagne house, with the tactile gastronomy of Argentine food phenonomen Chef Francis Mallmann.

Dom Pérignon is taking over an undisclosed private estate in New York’s Hamptons to launch an exclusive experience each evening from July 19-21, 2024. The trio of events will unveil Dom's two latest vintages — Dom Pérignon Vintage 2015 and Vintage 2006 Plénitude 2 — alongside a specially curated menu by Chef  Mallmann.

Upon their arrival at the undisclosed 21-acre estate, guests will embark on an emblematic Dom Pérignon solo tasting journey. Known for his distinctive 7-Fire cooking technique, Chef Mallman invented a menu to augment Dom’s dynamic new Champagnes, mirroring their contrasting profiles and complexities inherent in a Dom Pérignon Vintage.  “Taking inspiration from Dom Pérignon's latest creations, I'm thrilled to guide guests through a culinary journey where textures and flavors harmonize in unexpected ways,” says Chef Francis Mallmann. “Each dish will be an invitation to explore the nuanced depths of these spectacular vintages.”

Tactility is the aesthetic character that is revealed in Dom Pérignon’s two new vintages, poetically embodying a journey into the senses of touch and trace, key elements in Chef Mallmann’s culinary masterpiece.

“This experience with Chef Mallmann allows us to create a space where we celebrate the balance found in opposing forces, inviting guests to savor the convergence of exceptional culinary and champagne artistry while surrounded by the stunning ocean backdrop,” says Vincent Chaperon, Chef de Cave of Dom Pérignon. “This Dom Pérignon encounter opens the door to a world of endless possibilities, brought to life through the rare prestige of our latest Vintages.”

The gastronomic journey will commence with the distinct Dom Pérignon Vintage 2015, characterized by an assertive, structured profile. Transitioning to the Vintage 2006 Plénitude 2 — which reached the Plénitude 2 mark after seven additional years of maturation — the palate experiences a new world of viscosity, suppleness, and texture variations which enhance each P2 sip. Each menu course pairing will uncover the unique aesthetic and values of the two vintages, while accentuating the champagnes’ multi-dimensional qualities.
